Pizza Pie

Today has been a beautiful day. I actually read for a couple of hours this afternoon and... took a short nap! I felt so relaxed I got up and watered and decluttered the plants in the sunroom. I think I may have heard the plants singing praises :) Days like today make my heart swell with thankfulness to the LORD for all he has blessed me with.

Last Saturday when ML and I went to Whole Foods, I picked up a frozen ball of pizza crust. I had this idea to cook a pizza in my cast iron skillet. Well, tonight I did it.

The ball of dough had to thaw for about 5 hours. I rubbed a bit of olive oil in the skillet and started to flatten out the dough. That's when I realized I had more dough than I needed so I took about a third of it to make a second pizza. I used the majority of the dough in the skillet to make a pan crust and flattened out the remaining dough for a thin crust pizza I baked in my round stone. I had already browned my beef and onions and had cut up mushrooms, olives and tomatoes.

I put the dough in the oven to cook for 5 or 6 minutes then topped them with marinara sauce, mozzarella cheese, and the rest of the ingredients. They baked for close to 20 minutes. They were very tasty! It was just the hub and I so we had plenty left to warm up tomorrow for lunch.

All in all I think this idea was a keeper.
